Thing is, when I design "Static XFA Form" I am able to do the get/set
operation on AcroForm before & after the User Digital Signature. But if a
design "Dynamic XFA Form" then only get/set operation can be performed
without the Digital Sign, as user insert the Digital Sign, reading and
changing the AcroForm values capability get lost.
Any idea, if this a Bug in iText or Feature ? or any work around, as I need
to Dynamic XFA components on my form.

I think you didn't create an AcroForm. I think you created an XFA form.

If you own a copy of "iText in Action - Second Edition", please read
chapter 8.
There's an example in chapter 8 that explains how to fill out a Reader
Enabled XFA form using iText.
