I think some JavaScript could fix this. You need to define a text field, 
and fill out this text field with the current date using an 'additional 
action' that is triggered before printing.
This won't work on all viewers though. For instance: don't expect this 
to work for people who view the PDF in Google Chrome or on Preview on a Mac.
