The solution is to remove some of the 5.2.x version.
People who want to be future proof should use iText 5.3, because older 
versions of iText create signatures that:
1. aren't mentioned in the PAdES standard, or
2. will be deprecated in PDF 2.0.
You'll read all about it the upcoming paper.
In short: by choosing to stay with iText 5.2.1, you'll be creating 
signatures that will become obsolete in 2013. If that's your choice, 
that's fine by me.
