That's the same behavior of Apple Preview ;-)
In Apple Preview, the problem lies with the appearance streams.
Show us your PDF so that we can check if that also the problem you're experiencing.
I've never heard this problem in the context of iText, but then again, I've never worked with a form created using Nitro.
