I tried setting:

option ivtv enc_mpg_buffers=16

and I'm still getting a bunch of errors about MPEG and VBI buffers being
full.

I wonder what's going wrong in MythTV such that 16 MB (16 seconds) still
wouldn't be enough.  That's really weird.
