check your recording profiles (IIRC Setup/Recording/Recording Profiles) in MythTV. By default I think they are setup for 480x480.
The image is not only stretched, color is not good, seems a synchronization problem.
What's in your modprobe.conf?

put ivtv in your /etc/modules.autoload.d/kernel-2.6 don't know if you need the saa7127 options; i think that's only for 250/350. I've noticed it's best to let ivtv detect as much as possible.
