videolan-client (aka vlc) is a great choice.  That is what we are using
right now and it seems to be working really well for us.  With a P4
3.4ghz you can stream 4 transcoded streams from one machine.  If you don't
transcode them you could do it with a lot less than that.

You do need to make sure it is compiled with PVR support:

--enable-pvr

 at configure time. If you are using Fedora Core 4 I have an RPM with it
compiled in if you want it.
