Thank you very much for trying to help and apologies for not replying 
earlier.

Your guess about a network app trying to reconfigure my VNIC was correct.
When I stopped using ifconfig for setting an IP on my VNIC and used config. 
files in /etc/network/interfaces.d instead, the issue got resolved - I no 
longer "lose" the IP on the VNIC.
It must have been the NetworkManager that tried to reconfigure the VNIC, 
just as you have suggested.
