I'm a big fan of NetSaint for system monitoring (http://www.netsaint.org).
There are numerous scripts and you can write your own (all open source) and
you can set how quickly it goes to a warning or critical level and how to
notify you.  For SMTP checking, it just connects, sends a HELO, and then
disconnects.
