I had problems with my James installation being an open relay in - perhaps - a similar environment as yours. In my case, James was behind a firewall with incoming email ports being directed to my James server. What happened was that every email appeared to be originated from my firewall ip address.
To correct it, I commented out the RemoteAddressNotInNetwork mailet, and enabled the SMTP-auth instead. I do not know for certain that this was my problem, but it was the cure.
