In each case only the first option is correct: "omoshirokute yasashii"
and "benri de kantan da", respectively. Particle "to" is never used to
enumerate multiple adjectives nor verbs. It can only be used to
connect nouns; for example: "ocha to koohii", "Makiko-san to
Hiroshi-kun".

If you say for example "omoshiroi to yasashii", the meaning would
become "if sth is interesting, it is nice", which doesn't quite make
much sense. This is because there is another meaning which can be
conveyed through particle "to": a condition (one of several kinds).
