Hello - I am not sure what email client you are using. In outlook the easiest way to do this I find is to navigate with the Jaws cursor to the address line in a received email. Double click and press tab once will get you to a highlighted line with the email address. Pressing control c will copy the information out.
I suspect something similar will work in Outlook Express. Also in many email clients replying to a message will insert that address in your address book.
