In 2007 hit the alt key then arrow over to options. Now down arrow and then right arrow until you hear fields, show bcc and hit enter. Now your bcc field should show.
In 2003 I think you do an alt v then arrow to headers, right arrow and arrow down to show all and hit enter. The last is from memory, so it might not be exactly correct.
