If you open a PDF document with Adobe, you can read the document but if you save it, the only option in adobe is to save it as an unformatted text file.
If you open it with conversion software, you can save it as a word document, or in any other format allowed by the conversion software. If you read the document in adobe, once you close it, the document returns to its original PDF formatting.
