You can go a couple of ways on this. If you uninstall 2003, you will not
lose any of your documents, but you will lose the program folders.
However, you can install 2007 right over top of 2003.  In this way, you can
hold onto your 2003 folders if you have a wish to. You can also operate a
hybrid. For instance, I really don't like Outlook 2007. So, I installed
Office 2007, and unchecked Outlook 2007. So, 2007 is in place for everything
except Outlook which is running 2003. This works fine.
