Is it possible to record something using lets say, audacity, have jaws come
out of the headset and not be heard during playback of the recording?

All I can really suggest is review your choices very carefully.  I have a
headphone choice without an additional card plugged in because it is just on
my built-in card.  Choosing it doesn't actually switch to the headphone
jack, it just stays with the speakers.  Once I connect my bluetooth headset,
I get another headset choice and it works as expected.
