Well, the text isn't actually IN the next column, but flows over that column provided there is no data already in that column. If there is already data in the adjacent cell, you can only visually see the data that physically fits in that cell. As an example, by default, a cell can contain about six capital letter O, (not to be confused with the number zero) before the above happens.

As far as the basic non-visual function of the spreadsheet, column width is probably not that important. However, that's another story when you have to display / print your worksheet.
