Hello, 

You can use the Find and Replace dialog box to do this.  

1.  Press CTRL+H.
2.  In the Find What box type the word for which you want a count.
3.  In the Replace with box type a ^ followed by the ampersand.  Use shift
with 6 for the caret and shift with 7 for the ampersand.  Don't use any
spacing. The ^& characters tell Word to replace whatever is in the Find What
box with itself.  
4.  Tab to the Replace All button and press spacebar.  

Note:  If you are wanting whole words only be sure to check that box in the
Find and Replace dialog box.
