Try this. Ins + J gets you to JAWs. Alt H to the Help menu. Arrow down to the start up wizard. Under common options you'll see an option for how JAWS handles ribbon menus. If X mark the box and tab through the other screens to finish.

I may have given you the wrong keystroke.
  Are you speaking of the normal ribbons in word, or the 2003 style ribbon
which you can switch over two with jaws in the setting center?
