When using MS-Word2010, as I do not know if this works in newer versions of Office here is what I do to remove Protected view from the current document I am viewing.
Use Alt+f to open the File Menu Use either up or down arrow to navigate to Information. It should be near the top, but for some odd reason JAWS does not always catch it. When you find it, use Right arrow to open the submenu. Use Down arrow until you hear Enable Editing. You may have to listen carefully as sometimes this phrase is caught up in a bunch of other stuff JAWS is rattling off. If you miss it, use your Up arrow to move back up to it. Press Enter once you find it. You are placed back in your document and you can navigate and edit normally in most cases. I say in most cases because if you had to turn off Protected Mode, this means that the document was sent to you. So depending on what the person did to create the document will determine what you are faced with at this next point.
