Sanouk mentioned he is using the version "Release ID: JBoss [The Oracle] 
5.1.0.GA".

In this release the strategy for VM configuration is bit complex from 5.0. The 
JAVA_OPTS are set to a nominal standard value by the run.conf.bat (which inturn 
is called via run.bat), value is set only if JAVA_OPTS are not set by any other 
means.

In Sanouk's case service.bat is setting JAVA_OPTS=-Xrs, hence it is not being 
changed by run.conf.bat as is visible from the logs:

JAVA_OPTS: -Dprogram.name=run.bat -Xrs -server

So in  the absence of any memory arguments VM is giving the OutOfMemoryError.

To resolve you can apply two approaches & modify the service.bat appropriately:

Comment out the following so that they can be automatically be set via 
run.conf.bat.
rem set JAVA_OPTS=-Xrs

Or Specify the appropriate values for your memory requirements such as:

JAVA_OPTS=-Xrs -Xms256M -Xmx512M -XX:MaxPermSize=256M 
-Dsun.rmi.dgc.client.gcInterval=3600000 -Dsun.rmi.dgc.server.gcInterval=3600000 
-Dorg.jboss.resolver.warning=true
