I was able to get it to work again with the following steps:
1. Close Eclipse
2. Delete all +org.jboss.tools.*+ directories from +.metadata/.plugins+
3. +eclipse -clean
+

Now JSF2 content assist is functioning again, so I assume this is some sort of 
caching bug?+
