You want to know what it was? I changed from using EntityManagerFactory.createEntityManager() which is deprecated to using EntityManagerFactory.buildEntityManager.
That bust the whole thing! I'm sticking with the deprecated method. What's going on? They've basically broken Hibernate, by adding a new method which doesn't work, and deprecated the working method!
