Many people (including myself) use Ant.

Hint: look at the <jar> task.
Using Ant is much easier than having to start up a GUI like Sun's
deploytool every time you want to make a change, and can be automated.
In combination with JBoss' autodeploy feature, it makes iterative
development a snap.
