if you do not want that JBoss create and drop tables every time your par is deployed/undeployed you have to change the property "hibernate.hbm2ddl.auto" in your persistence.xml.
Possible values are: validate | update | create | create-drop The remcommended value is "update", which has the same effect as create, but your entries won't disapear ;) But you can not completly avoid that the table is created or updated when the par-archive is deployed (loaded) as far as i know.
