You can't, it is hard-coded in jboss-hibernate.jar.

see : Hibernate.class, transferSettings()

 settings.setProperty("hibernate.transaction.auto_close_session", "true");

You can still use still the sar-approche for deploying you're hibernate files

or roll you're own  jboss-hibernate.jar
