Not sure if this is feasible, but you could have one MBean.  And write a custom Interceptor that you use to tell the MBean that an EJB has been called with such and such a ejb-name and method name.  Although this would not catch those rare calls that are resolved on the client side.  But if you switched to 3.0 and put the Interceptor on the client side stack, then that would be solved.  You need to decide what is a call.  Do you want to count every method call?
