The "getting started with jboss" document has some info on setting up a simple web service. http://www.jboss.org/docs/index#free-32x
Additionally Jboss.net is a fairly minor repackaging of the apache axis system: http://ws.apache.org/axis Most axis information is relevent to jboss.net (web-services.xml is just an axis WSDD) The J2EE tutorial at sun has general information about soap & xml. but the webservices stull isn't very applicable to jboss. Recent JBoss versions also have some support for the J2EE webservices (cant remember the JSR# right now) model (this is still fairly young).
