you need to amend the server.xml file to remove one instance of the problem 
jar, and keep repeating the process until all errors are gone.

Fabio, 

if I understand you correctly, then you've placed the  new hibernate and 
xdoclet jars in the plugin, in order to bring them uptodate. If so, then you 
need to also change the listed jars in the plugin.xml file, so that it uses the 
new jars. This should also let you use the new tags that you mention.
