Several plugins (and possibly even Jenkins core) don't disable password autofill for various passwords entered in Jenkins. It's likely your browser gets confused with different passwords entered on the same site and updates your stored password with some other password.

Other symptoms include you accidentally changing credentials stored on a config page when submitting it without changes.

As this can result from any plugin allowing password storage, my suggestion is to remove stored password for Jenkins from your browser, make sure you get asked before it saves, and then try to find out which forms/form fields ask for passwords without setting the "do not autofill" flag (don't remember it's real name right now).

Then you'll know which components to file an issue against. I'll leave this open for a bit but I'm fairly sure this is the issue as you mention manually entering the password works, and Jenkins doesn't store it – your browser does.
