Since you're doing an installation, you can do a custom install and
uncheck the checkbox for the Office Assistant and not even bother to
install it.
Under the custom install, after the various products are listed, is
something called Office Tools. Highlight this option and choose the
change button. You should find the Office Assistant in the list that
is displayed. The default is checked, but you can uncheck this item.
I'd also suggest that you uncheck Fast Find unless your organization
uses this or unless you are going to have a lot of documents.
FYI to all, anyone who has the installation CD can use this same
method to uninstall the Office Assistant if they already have it
installed.
Barring this method, if it's installed, have someone who can see
right-click the office assistant and choose hide from the resulting
menu.
