Alternatively,to not hear those annoying greater than signs in eudora (or
other programs),

{Insert+d} to bring up dictionary manager.
Pick add button
enter > (greater than symbol) in first edit field,
enter spacebar in 2nd field.
Pick ok button.
{Ctrl+s} to save your changes.

Voila, no more > signs.
