[~chia7712] That is only true for PR builds, trunk builds are still run tests 
for all of 8, 11, 17, 21.

When I say that the current README is accurate, I'm interpreting "We build and 
test Apache Kafka with Java 8, 11, 17 and 21" to mean "We build and test Apache 
Kafka with Java 8, 11, 17 and 21 {_}at some point in the development cycle 
before release.{_}"

I see this line in the README as a condensed form of our JDK support matrix, 
meant to let developers know that we must write code that is compatible across 
multiple versions. To that end, it isn't harmful to let developers know that we 
eventually test (and expect the tests to pass) on 11 and 17.
