Pulseaudio is a much more feature rich sound interface than ALSA, say. You can freely assign inputs and outputs, group them, etc. Also it allows you to control volume by application. It is now pretty much stable (whilst I do agree that when it was first released it was very buggy, but Ubuntu has a history of doing that at which point the products receive much more attention and get stable very quickly. This has added many great features to Linux). I have it working fine with pulseaudio as described above. For me removing pulseaudio would not be a viable solution.
