You can revert to the previously loaded firmware by holding down the volume up button on the IR remote while rebooting (not resetting) the Touch via the button on the back. But you can't load an older firmware of your choosing: http://bugs.slimdevices.com/show_bug.cgi?id=17526. You'll be prompted again at some point to update the firmware to the newest version, but this can easily be ignored by swiping the screen from left to right or holding the left-arrow button on the remote.
