There should be a GUI for the CSV results file configuration options in 
jmeter.properties

Second draft func spec for a prefs pane for CSV results file configuration:

Left-hand scrolling list of CSV column names to be excluded.

-> (icon button, moves a selected CSV column name from the left-hand list to the 
right-hand list)

->> (icon button, moves all CSV column names to the right-hand list)

<- (icon button, moves a selected CSV column name from the right-hand list to the 
left-hand list)

<<- (icon button, moves all CSV column names to the left-hand list)

Right-hand re-orderable scrolling list of CSV column names to be included.

Moving a CSV column name from the left-hand list to the right-hand list, and/or 
clicking on a CSV 
column name in the right-hand list, displays configuration options for that CSV column 
if any (applies 
to timestamp and assertion results) as per previous draft.
