As your stubs are going to be far quicker at servicing request than the
third party application (presumably) the response times are going to be
much shorter than they would be in the actual live environment.

Your testing environment should be identical to your live environment in
every way.  A testing environment that has to do less work to service a
request than a live environment is not going to give you meaningful
results.
