Gluten is always in wheat. It is also in every grain except rice and corn. In fact, it's not really the gluten that people react to. It's a protein called gliadin, which the body produces from gluten. But it's just easier to say "gluten intolerant." (Although I've had people, including nurses, hear "gluten," think "glucose" and assume I was diabetic. LOL!) lots of love Anne
