I se what you mean. It looks like it's trying to show one more item at the far right.
I haven't used jCarousel is a long time, but your best bet is to use the non packed version and step through the code till you find the issue. Actually, before that, create a much simpler page and see if the problem still exists. It might well be something else in the page that is causing the issue.
