Well, now you can, sort of. MIT has been working on their OpenCourseWare since the late 90s and have several courses in just about everything under the sun. Their Media Arts and Sciences has some pretty cool assignments (with a fair amount of programming ones).

I browsed through several courses, very cool stuff. They are aiming to have it all online by the end of this year and are working with other institutions as well.
