Variable-width is nice for things like buffering a stream network, where you want the streams at the upper end of the network to be smaller than the ones towards the mouth. I think there's probably lots of other uses too. (I saw a picture of the predicted "cone of impact" of Hurricane Katrina the other day - this could be generated with a var-width buffer along it's path)

One-sided buffer is I assume obvious - buffer a line on one side, but not the other. Offset curves are another useful function.

I noticed that Arc has a "repeated concentric buffer" option, which is used for things like shading around a coastline. This might be a nice option for your super-duper buffer dialog.
