OK! Here is what I came up with.
Please help out if you see something wrong here...

As suggested by Shean, I BCC myself on all emails and keep the default sent
folder.
This is not ideal as I then end up with ALL mail sent from K9 on my inbox.
Solution is to create a filter rule in Thunderbird. There might be options
to do this on other email clients...

Match all the following:

   - Form > is > myem...@mail.com
   - User-Agent > is > K-9 Mail for Android (or what have you)
   - Subject > doesn't contain > Re: (this one is created under customize
at the bottom of the options)

Perform these actions:

   - Move Message to > Trash on myem...@mail.com

With this, any email sent to me from me is put in both inbox and sent
folder. If subject contains "Re:", it is part of a thread and left in the
inbox. If subject does NOT contain"Re:", it is not part of a thread and
therefore erased from the inbox and left on the sent folder.

Should work fine, right?
