Fun Recipes for Flag Day

RED,  WHITE  &  BLUE  (FLAG)
Slice a pound cake in 8 thin slices and lay them in a 9x13 glass
baking dish; cover with 1 cup blueberries, 1 cup sliced strawberries;
cover with 8 ounces Cool Whip; place 50 blueberries in upper left-
hand corner for stars; use sliced strawberries laid lengthwise to
make 5 red stripes.  Refrigerate for 30 minutes before serving.

FLAG  CAKE

1 pkg. yellow or chocolate cake mix
2 pts. fresh blueberries
3 pts. fresh strawberries
3 c. whipping cream (do not use whipped topping in aerosol can)
1/2 c. confectioners' sugar

Bake cake according to package directions in 9 x 13 inch pan.  Cool.
(May be made ahead and frozen).  Set on serving plate or board.  Whip
cream with confectioners' sugar.  Cut strawberries in half
lengthwise.  Spread cream evenly around sides of cake.   Using a
pastry bag, pipe (or spread with a spatula) rows of cream alternating
with rows of strawberries for the flag "stripes".  Make a background
of blueberries in the upper left-hand corner, then pipe stars on top
to create the "star" section of the cake.  If making the cake ahead,
arrange fruit several hours before serving.  Add cream up to an hour
before serving.  Serves 12.

USA  FLAG  LEMON  DELIGHT

1 1/2 sticks butter or oleo
1 1/2 c. flour
2/3 c. chopped nuts
1 c. powdered sugar
1 c. blueberries
8 oz. cream cheese
8 oz. Cool Whip
2 sm. boxes instant lemon or any flavor pudding
3 c. milk
1 c. strawberries

Melt butter.  Add flour and nuts.  Press into bottom of 9 x 13 inch
or 8 x 12 inch baking dish.  Bake at 325 degrees for 30 minutes.
Blend cream cheese, powdered sugar and 1 cup Cool Whip.  Spread over
cooled crust.  Mix pudding and milk; spread over cream cheese
mixture.  Top with remaining Cool Whip.  Arrange strawberries on top
in rows for strips.  Arrange blueberries for stars.


FLAG  CAKE
3 c. Bisquick baking mix
2/3 c. granulated sugar
2 eggs
1 c. sour cream
1/2 c. cold water
2 tsp. Vanilla
1 c. chilled whipping cream
2 tbsp. powdered sugar
1 c. blueberries
3 med. bananas, sliced
1 tbsp. lemon juice
1 pt. strawberries, cut into halves
2 tbsp. apple jelly, melted

Heat oven to 350 degrees.  Grease and flour pan, 13 x 9 x 2 inches.
Mix baking mix, granulated sugar, eggs, sour cream, water and vanilla
on low speed; scraping bowl constantly, 30 seconds.  Beat on medium
speed, scraping bowl 4 minutes.  Pour into pan.  Bake until tester
comes out clean, 35 to 40 minutes.  Cool.  Beat whipping cream and
powdered sugar in chilled bowl until stiff. Spread on cake.  Arrange
blueberries, in rows, in upper left corner of cake.  Toss banana
slices with lemon juice.  Make stripes by altering rows of
strawberries and bananas.  Brush apple jelly over fruit. Refrigerate
until serving time.


AMERICAN  FLAG  CAKE
1 (18 1/2 oz.) pkg. yellow or white cake mix
1 (3 oz.) pkg. strawberry gelatin
1/2 c. boiling water
1 (3 3/8 oz.) pkg. instant pudding mix
1 1/2 c. milk
3 c. prepared whipped topping
1 c. blueberries
1 1/2 c. strawberries, sliced
1 1/2 c. bananas, sliced (dipped in lemon juice)
1/2 c. mini marshmallows

Prepare cake mix according to package directions in 13x9 pan.  Remove
from pan.  Cool completely on wire rack.  Place cake on wire rack
over sheet of waxed paper.  Poke cake using fork at 1 inch
intervals.  Dissolve gelatin in boiling water, slowly drizzle over
cake to allow gelatin to seep into holes.  Chill 1 hour.  Prepare
pudding according to package directions using 1 1/2 cups milk. Fold
in 1 cup whipped topping and 1/2 cup blueberries.  Split cake
horizontally in half.  Fill with pudding mixture.  Spread remaining
whipped topping over sides and top of cake.  Arrange blueberries in
rows where stars would be.  Alternate rows of sliced bananas and
strawberries to resemble stripes.  Place marshmallows all around edge.
