Thanks for assisting me on this one!

I tried a few things since the last comment:
I ordered an HDMI cable. Connecting the screen to my nvidia gpu via hdmi still
has the delay, so it's not DP only. 
I connected the screen via HDMI to my mainboard gpu (AMD MSI X670E Gaming Plus
WIFI). At first nothing happened because I blacklisted the amdgpu kernel module
at some point in the debugging process. I rebuild my nixos config on the fly,
which seemingly reenabled the kernel module, and the screen instantly (!)
connected! It ran at 120hz 1440p, but still, that was great. 
Unfortunately after a reboot (still connected to mainboard with hdmi) the
screen takes a while to connect again. 

This makes me think that the issue can be solved! We just need to find out
which component was not loaded when the screen worked fine after rebuilding.
