There is no such thing as an exclusive fullscreen mode. Spectacle is indeed
just the exact same as Firefox or a game, it's just a window that covers the
full screen and triggers adaptive sync the very same.
There isn't really any (good) way for us to find out which kind of content an
application is showing. As a workaround, you could set a window rule to disable
adaptive sync in Spectacle.

Once bug 504710 is fixed, it won't really matter anymore whether or not the app
in question draws at a consistent refresh rate.
