I"m pretty sure this is not a UI issue, but a misunderstanding of transactions.
 If you import a csv file, you have to specify whether the import is banking or
investment.  You are correct that investment transactions and what you call
regular or normal transactions are not interchangeable, but which type is
created is specified by the type of import.  (I believe the same distinction is
made with other import types.

As for the use of the "Category" dropdown, it is used to specify an account. 
In regular transactions, this can be a Category (Income or Expense account) or
a regular account (for a transfer transaction.  For an Investment Transaction,
it specifies the account which represents the shares of the specified security
held in that Investment Account,
