the current appdata.xml does not have an oars tag. This is required for Flatpak
and it's part of the official standard:
https://www.freedesktop.org/software/appstream/docs/chap-Metadata.html#tag-content_rating
In the current version on Flatpak, I use sed to add an empty age rating element
to the manifest:

If you can add a <content_rating type="oars-1.1"/> tag to the manifest for the
next version, then that would be great.
