Keeping up-to-date with development versions of KDE isn't always necessary to write documentation, so don't worry about that. One thing that comes to mind for which we don't require development versions is KOffice. If you have the latest stable version, you've got all you need to write for KOffice. One third-party app that I'm aware of which needs some help with documentation is Apollon, a client for the giFT file-sharing program.
