Thanks, Darren. I dug deeper into the logs and in this instance the unattended upgrades service did run before this. It appears that service is scheduled to run daily and if that's true, then for some reason, the DHCP4 service won't come back up only on some occasions.

If this is Ubuntu, I would check for "unattended upgrades" package: https://documentation.ubuntu.com/server/how-to/software/automatic-updates/ as this service WILL unexpectedly restart services. Generally speaking, unattended upgrades are a very bad idea because things may break during an update and a human needs to be in attendance so that they might be fixed in a timely fashion (actually, upgrades should first be tested in a lab environment if you want to be really safe).
