I've been able to install and use kernel 4.11.0-041100-generic #201705041534 and the issue is still happening. It seems to take longer for dmesg to log anything or for Network Manager to show that the ethernet interface has been disconnected. The issue will still occur within the first few minutes after booting and I tested this out by pinging Google and other computers on the internal network.
